You’ll still have to watch them as once they hit a certain point they will wilt quickly. So ditch the ordinary and embrace the extraordinary with this simple yet sensational pea shoot stir-fry!

We enjoy this as a side dish but serve it on top of white or brown rice with tofu, chicken, beef, or shrimp and you have an entire healthy meal. Don’t forget to add your flare and the ingredients you like. We love fresh grated ginger, soy sauce, and toasted sesame seeds. Be creative!

INGREDIENTS
Serves 2

  • 2 Cups organic pea shoots
  • 1 Tbs extra virgin olive oil or sesame oil
  • 2 cloves garlic
  • 1 tsp red pepper flakes
  • sea salt and black pepper to taste

**Add tofu, chicken, beef, or shrimp and serve on top of rice to make it a full meal! 

DIRECTIONS

  1. Heat the olive oil in a skillet over medium heat. 
  1. Add garlic and cook until fragrant, 1-2 minutes. 
  1. Add red pepper flakes and cook for about 30 seconds. 
  1. Add in the pea shoots and season with salt and pepper, to taste. Cook for about a minute, stirring constantly. The pea shoots cook down quickly, so make sure you’re watching them and turn the heat off before they get too wilted. 

Voilà! A simple and nourishing side dish or meal in less than 20 minutes.
