Holiday Mashed Potatoes with a Zesty Kick!

Ingredients:
- 1 large package of Zesty Mexican Blend microgreens, chopped
- 1/4 cup butter (1/2 stick)
- 2 T sour cream
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 lb Yukon Gold potatoes, washed and cubed
- 1/4 cup raw milk or, for a lighter version, chicken stock
Serves 6 – 8
Directions:
Prepare the Ingredients: Wash and cube the Yukon Gold potatoes, keeping them similar in size for even cooking. Place them in a pot of salted water (about 1/4 teaspoon of salt) and bring to a boil. Cook until tender, about 20-25 minutes, depending on potato size.
Chop the Microgreens: While the potatoes are boiling, chop the garlic and the Zesty Mexican Blend microgreens. It’s essential to chop the microgreens finely to avoid any stringiness, especially with the micro radish.
Mash the Potatoes: Once the potatoes are tender, drain them but don’t rinse. Return them to the pot over low heat, and add the butter, milk (or chicken stock), sour cream, minced garlic, salt, and pepper. Use a potato masher or hand mixer to blend until smooth and creamy. Be careful not to over-mix, as this can make the potatoes gummy.
Add the Microgreens: Fold in the chopped Zesty Mexican Blend microgreens. These microgreens not only add nutrition but also elevate the flavor profile of the mashed potatoes, making this dish a healthy and sophisticated twist on a holiday classic.
