This bone marrow recipe with microgreens combines salty with spicy and is the perfect superfood appetizer for any night of the week. Not many think of preparing bone marrow as part of a meal, but served with bread and a heaping side of microgreens you have a satisfying and nutrient-dense appetizer. The salty and buttery bone marrow goes perfectly with our spicy and crunchy Hot & Healthy Mix. This mix is a vibrant blend of daikon radish, purple rambo radish, green cabbage, and purple kohlrabi.

(4) canoe cut beef marrow bones (cleaned)

Salt and pepper to taste

(1) heaping handful of Hot & Healthy Mix

Serve with a side of bread, crackers, or pita. The bone marrow spreads like butter and the microgreens give the dish a nice garnish and crunch.


Preheat oven to 450 degrees

Step 1:
Place the bones with the flat side facing up on a baking sheet or roasting pan lined with parchment paper. Season generously with salt and pepper, to taste.

Step 2:
Roast for 15 – 25 minutes (cooking time depends on the size of the bone and how much marrow the bone contains). Once the marrow begins to bubble on the surface, they are done. Remove from the oven.

Step 3:
Sprinkle a generous handful of Hot & Healthy Mix over the top of the marrow. Serve with bread/toast, pita, crackers, etc. Simply scoop out the marrow and spread it like butter. ENJOY!
