Enjoy a vibrant and refreshing meal with this Easy Poke Bowl Recipe featuring our Power Greens Mix.Â

Ingredients:

For the tuna marinade:
-2 tablespoons soy sauce
-1 teaspoon rice vinegar
-1 teaspoon sesame oil
-1 tablespoon sesame seeds

For the dressing (optional):
-2 tablespoons soy sauce
-1/4 cup fresh orange juice
-1 teaspoon sesame oil
-2 teaspoons maple syrup
-1 tablespoon water, add more if needed for consistency

For the poke bowl toppings (mix and match your favorite ingredients):
-2 ahi tuna steaks, between 6-8oz each
-cooked rice of choice (we prefer white rice)
-1 cup cooked edamame, shelled
-seaweed, fresh or dried
-avocado, sliced
-green onion, chopped
-cherry tomatoes, sliced
-cucumbers. sliced
-carrots, shredded
-sesame seeds
-wasabi
-chili sauce
-1 small package of Power Greens Mix microgreens
Instructions:
- Combine ingredients for tuna marinade and marinate tuna steaks for at least 30 minutes.
- In the meantime, cook your preferred rice and the edamame for the poke bowl.Â
- You can eat the tuna steaks raw, or you can sear them for about 30-60 seconds on each side in a pan of hot butter.
- Make the dressing by adding the ingredients into a food processor or blender. The dressing is totally optional, but it adds a lot of flavor to the dish!Â
- Assemble the poke bowl with your favorite ingredients.Â
- Top with fresh microgreens like our Power Greens Mix.
