Pumpkin Tahini Bowl with Microgreens
Ingredients:
- 4 medium-sized pumpkins – scoop and cube flesh, rinse & dry seeds
- 2 Tbsp olive oil
- 1 Tbsp cumin
- 2/3 cup red quinoa
- 2 cups purple kale
- 2 cups chickpeas (drained and rinsed, if canned)
- 1 lemon, juiced
- Salt and pepper to taste
- Tahini to taste
- 1 teaspoon sesame oil
- Toasted sesame seeds
- 1/2 cup pumpkin seeds
- 1 large pkg Micro Kale
- 1 small pkg Micro Radish
Directions:
- Preheat oven to 450°F.
- Pumpkin Prep: Cut off the tops of the pumpkins, scoop out the insides, and rinse/dry the seeds. Chop the pumpkin flesh into bite-sized pieces. Toss the cubes with olive oil, salt, pepper, and cumin, then roast for 35–40 minutes until tender.
- Quinoa Cooking: While pumpkins roast, rinse quinoa and cook according to package instructions (usually 15 minutes with 1/2 cup water). Add a squeeze of lemon juice once done.
- Prepare Kale: Remove stems and chop kale into thin strips.
- Assemble the Bowl: In a large bowl, combine roasted pumpkin, cooked quinoa, chickpeas, and kale. Drizzle with tahini and sesame oil.
- Finish and Serve: Top with toasted sesame seeds, pumpkin seeds, and fresh Micro Kale and Micro Radish. Enjoy!
