Ingredients:
- 1/2 red cabbage, shredded
- 1/2 green cabbage, shredded
- 1 thinly sliced white onion
- 1 carrot, shredded
- 1 T chili powder
- 1 t cumin
- 1 t paprika
- 1 T olive oil
- 1 T red wine vinegar
- 1 lime, juiced
- Salt and pepper to taste
- 1 heaping handful of Rainbow Swiss Chard Microgreens

Directions:
Step 1: Pickle the Onions Thinly slice the onion and toss it in a bowl with red wine vinegar, a pinch of sugar, some salt, and pepper. Let them soak for at least 20 minutes to absorb the flavors. You can add a bay leaf and/or allspice berries to add a nice depth to the sweet onion flavor.
Step 2: Prep the Veggies While the onions are pickling, shred the red and green cabbage and the carrot and mix in a large bowl.
Step 3: Make the Dressing Drizzle the olive oil and additional red wine vinegar over shredded veggies. Add chili powder, cumin, and paprika. Toss everything together to combine. Season with salt and pepper to taste. Add lime juice and mix again.
