Cozy up with this warming lentil soup, made special with a garnish of Micro Amaranth!
Ingredients:
- 3 Tbsp extra virgin olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp tomato paste
- 1 tsp cumin
- Salt and pepper to taste
- Cayenne to taste
- 1 quart vegetable or chicken stock
- 2 cups water
- 1 cup red lentils, rinsed and drained
- 1 carrot, peeled and diced
- Lemon juice to taste
- Micro Amaranth and Thyme to garnish
Serves 4
Directions:
In a large soup pot, heat olive oil, then saute onion and garlic until golden.
Stir in tomato paste and all seasonings, mixing well.
Pour in stock, 2 cups of water, lentils, and carrot. Bring to a simmer, then partially cover on medium-low heat for about 30 minutes, or until lentils are soft.
Season to taste with lemon juice, more salt, pepper, and cayenne.
- Optional step: use an immersion blender to blend soup into smooth, creamy texture.
- Serve and garnish with thyme and Micro Amaranth.
