Bison Burger With Microgreens

BISON BURGER WITH MICROGREENS

This recipe pairs two of our favorite ingredients; bison and spice lover’s mix microgreens. Our spice lovers mix is a blend of daikon radish, micro arugula, and micro mustard. This mix is specially crafted to give you a spicy bite from start to finish. That’s why we love pairing it with the lean and flavorful bison meat. Bison is much leaner than standard cow beef also making it a healthier option. We include the best spices to use with bison including recommended temperatures. Bison can dry out easily so be sure to stay on top of them so they do not overcook. The summer may be winding down but these bison burgers are perfect for the cool fall evenings. Ingredients

For the patty:

  • 2lbs ground bison
  • 1Tbs Worcestershire sauce
  • 2 cloves of garlic, minced
  • 1/2 shallot, chopped
  • 1/2tsp ground mustard
  • 2Tbs grass-fed butter
  • salt and pepper to taste

For the toppings:

  • Spice Love’s Mix from Homegrown Health Farms
  • Slice cheddar cheese (or use any cheese you like. Since bison is so lean it is recommended to use a cheese with a higher fat content.)
  • Dill pickles or relish
  • Hamburger buns – We like brioche buns for their sweetness!

Start by adding ground bison, Worcestershire sauce, garlic, shallot, and spices in a large bowl. Mix to combine well so every patty has equal amounts of ingredients. Let the mixture warm up to room temperature, for about 30 minutes. 

When meat is ready, heat up the butter in a skillet and cook patties evenly on each side to the desired temp. 

Rare: 115°-120° 
Medium rare: 121°-129°
Medium: 129°-135°

Add cheese slices when you flip the burgers if desired until the cheese melts. 

Place burgers on buns, add a heaping pile of Spice Lover’s Mix and dill pickles for the perfect balance of sweet, salty, and spicy!
